Soy sauce Miracle Sauce/150ml
Like the lone pine tree in Rikuzentakata, this soy sauce is made by squeezing "miraculous moromi" that survived the earthquake. The deep, rich, and delicious taste of a long-established soy sauce, slowly and deliberately aged through two summers in the Tohoku region using traditional methods, has become a "drop of recovery" with the aim of reviving the taste of a 200-plus year old business, reviving the disaster area, and revitalizing the region.
The soy sauce was finally completed in November 2014, after being brewed with miraculously found pre-disaster "moromi" and passing through two harsh summers.
■ Iwate-grown soybeans and wheat are used. The slow and deliberate aging process has resulted in a deep, umami, strong koikuchi soy sauce.
